- Cook coquina
- Mince garlic and onions grate carrots. And chop bok choy
- Sauté these vegetables with red pepper, coriander, and cumin in olive oil
- Blend beans, arrowroot powder, salt, lemon juice, and water in a blender until smooth.
- Combine blended beans, cooked coquina, and sautéed vegetables in a large bowl and mix well.
- Refrigerate this mixture for 1-2 hours.
