Mustard Greens in Coconut Milk

Ingredients:

  • (use organic whenever possible)
  • 2 teaspoons olive oil
  • 1 medium red onion
  • 1 clove of garlic
  • 1 teaspoon brown mustard seeds
  • 1 ½ cups coconut milk
  • 1 teaspoon ground coriander
  • 1/8-1/4 teaspoon cayenne
  • 1 cinnamon stick, broken in half
  • 3 cups peeled and cubed yam
  • 1 large bunch of mustard greens (about ¾ pound)
  • sea salt to taste
  • fresh lemon or lime juice to taste

Directions:

  • Chop onion and mince garlic.
  • Sauté onions in olive oil until translucent. Then add garlic and mustard seeds and sauté until the seeds begin to pop.
  • Add coconut milk, coriander, cayenne, cinnamon stick and yam.
  • Cover and allow to simmer for about 10 minutes, until yam begins to soften.
  • Strip mustard leaves from stems and chop into bite sized pieces. Discard the stems.
  • Stir in greens and simmer, covered, over medium-low heat for about 15 minutes. Remove from heat when the greens are tender and the yams are soft.
  • Adjust salt to taste, remove cinnamon stick and squeeze in lemon or lime juice just before serving.
